Cream Cheese Stuffed Jalapenos

I have one last recipe to share before Super Bowl Sunday, I made these stuffed jalapenos about a month ago and everyone (Angie & Garcia Foodies) kept asking when I was going to make them again; well I thought tomorrow would be the perfect day for this spicy little recipe! I wish everyone a fantastically delicious Super Bowl Sunday!

Cream Cheese Stuffed Jalapenos
  • 10 large jalapenos, sliced in half lengthwise, seeds and ribs removed (I suggest wearing gloves when doing this)
  • 8 ounces cream cheese, softened
  • 8 slices bacon, chopped into 1 inch pieces
  • 4 ounces grated Parmesan cheese
  • salt and pepper to taste
Preheat oven to 350 degrees.

Brown bacon, strain on paper towels and set aside.

Bake empty jalapeno skins for 6-8 minutes until they are slightly softened. In a bowl combine cream cheese, bacon pieces and parmesan cheese, season with salt and pepper. Fill each jalapeno with about 2 tablespoons of the mixture. Bake for 10 minutes then turn on the broiler and broil for 5 minutes or until the cheese turns slightly golden brown. Enjoy!

Thanks Bestie, we had such a great time too! I think we need to do this every weekend! BTW, the hubby was bummed there was no salsa left over for his breakfast this morning! Lol
