Super Bowl 2010

For Super Bowl Sunday we had a few of our friends and their little ones over for some food, fun and football. JD had a blast trying to keep up with the big kids and we had a really great time too, we’re really looking forward to planning our next get-together!

Cream Cheese Stuffed Jalapenos

I have one last recipe to share before Super Bowl Sunday, I made these stuffed jalapenos about a month ago and everyone (Angie & Garcia Foodies) kept asking when I was going to make them again; well I thought tomorrow would be the perfect day for this spicy little recipe! I wish everyone a fantastically delicious Super Bowl Sunday!

Cream Cheese Stuffed Jalapenos
  • 10 large jalapenos, sliced in half lengthwise, seeds and ribs removed (I suggest wearing gloves when doing this)
  • 8 ounces cream cheese, softened
  • 8 slices bacon, chopped into 1 inch pieces
  • 4 ounces grated Parmesan cheese
  • salt and pepper to taste
Preheat oven to 350 degrees.

Brown bacon, strain on paper towels and set aside.

Bake empty jalapeno skins for 6-8 minutes until they are slightly softened. In a bowl combine cream cheese, bacon pieces and parmesan cheese, season with salt and pepper. Fill each jalapeno with about 2 tablespoons of the mixture. Bake for 10 minutes then turn on the broiler and broil for 5 minutes or until the cheese turns slightly golden brown. Enjoy!

I Love Pepsi: Pepsi Throwback Retro

If you’ve ever visited our home, then you know we are Pepsi people. I absolutely love Pepsi and most of my friends and family are also Pepsi lovers too. You will always find a Pepsi or Diet Pepsi as a drink choice in our home and if you don’t, it’s usually because I could only carry so many packs from my trunk. So, when I saw Pepsi Throwback in that classic retro can at my local Vons last week I was delighted, they will definitely be a perfect addition to any Super Bowl party, but hurry Pepsi Throwback Retro is only here for a limited time!

Olive Garden’s Spinach & Artichoke Dip

My best friend Angie and I love dining at Olive Garden, but we don’t get to eat there as often as we like; as a substitute I try to make some of our favorite Olive Garden dishes at home. This happens to be one of her favorites and the hubby actually loves this one too, although he dislikes artichokes in general, go figure. So, in an attempt to keep their tummies happy and to sneak some vegetables into our Super Bowl Menu, I plan on making this super yummy dip on Sunday and best of all I get to break in my new Pier1 Artichoke Bowl.

Spinach & Artichoke Dip

Ingredients:
  • 1 14-oz can artichoke hearts, drained and sliced
  • 1 6-oz pack fresh spinach, chopped
  • 1 lb cream cheese, room temperature
  • 8 oz mascarpone cheese, room temperature
  • 2 Tbsp all-purpose flour, sifted
  • 1 cup Parmesan cheese, grated
  • 1/4 tsp fresh thyme leaves
  • 1/4 tsp crushed red pepper
  • 1 Tbsp fresh flat leaf parsley, chopped
  • 1 garlic clove, minced
  • 5 green onions, chopped
  • Salt to taste
  • Ground black pepper to taste
  • 8 slices crusty Italian bread
  • Extra virgin olive oil (to drizzle)

Preparation:
Preheat oven to 325ºF.

Mix all ingredients in a large bowl, except bread and extra virgin olive oil.

Coat a large non-stick baking pan with pan spray; fill pan with mixture. Bake at 325ºF for about 25 minutes or until bubbling and center is hot.

Drizzle both sides of bread with extra virgin olive oil. Grill bread on both sides.
Sprinkle top of heated dip with Parmesan cheese. Serve hot with grilled bread.
