Katsuya



Friday night was date night with the hubby. JD stayed home with grandma and his favorite auntie Gaby (although his favorite auntie Mari would disagree). The hubby took me to LA Live and we had an amazing dinner at Katsuya we started with their famous Crispy Rice with Spicy Tuna and a Scallop Sushi Roll, my hubby had the Kobe Tobanyaki, I had the Japanese Prix Fixe (three courses with mochi ice cream for dessert), everything was simply delicious.
This restaurant is so intimate and chic, I can't wait to go back. Thanks honey!

Dinner was yummy...

If there's one thing I love to do more than eating, it's cooking! My dad has always been the chef in the house (although my mom can sure cook up some Dominican food), so as an only child cooking became sort of a hobby my dad and I shared. Having a family means I get the pleasure of cooking at least five times a week, so finding new things to make is always fun. Tonight I want to share a recipe that has become a hit in my house, and I must thank Paula Deen for this one (with a few twists of my own).


Oven Fried Chicken or Boneless Pork Chops
Ingredients:
2 cups Panko bread crumbs (Japanese style breadcrumbs)
1 cup grated Parmesan 
2 tablespoons olive oil
2 tablespoons melted butter
2 tablespoons freshly minced thyme leaves
Kosher salt and freshly ground black pepper
1/4 cup Dijon mustard
1 large egg
2 tablespoons water
2 1/2 pounds boneless skinless chicken breasts or boneless pork chops, pounded to 1/4 -inch thickness
Directions
Preheat oven to 400 degrees F. Line a baking sheet with heavy-duty aluminum foil. Place a cooling rack over pan and spray rack with nonstick cooking spray.
In a shallow dish, combine bread crumbs, cheese, 2 tablespoons melted butter, thyme, salt and pepper, to taste. In a separate shallow dish, combine mustard, egg, water, salt and pepper, to taste, and olive oil. Coat each chicken breast with mustard mixture; dredge each in bread crumb mixture. Place on prepared rack in pan. Bake for 30 to 45 minutes, or until chicken or pork chops are golden brown. Serve immediately.
Cook Time 30 min
Yield 4 servings

This is a picture of JD when he was ten days old.
I can't believe how much he's grown in the last few months. Everyday he does something that takes my breath away, I thank God for giving us such a healthy, handsome and happy little boy.

Drool happens...

I'm so excited this is my first post and from this day forward I plan on posting at least once a day. I thought I'd start by posting a picture of my little sunshine JD, this is the face I wake up to every morning. JD is 3 months old and tends to drool a lot (especially on mommy and daddy) but we don't mind.
